If you're having an urge for some spicy Cajun food, try out this simple Bisque recipe featuring cream corn and sausage.

Many people avoid cooking Cajun, because they think it's difficult to make Cajun food. There's definately an art to preparing authentic Cajun cuisine, but some of the basic recipes are actually fairly simple.

A good bisque starts with a basic roux. This is a kind of gravy which acts as a thickener and also gives that Cajun flare to a recipe.

This bisque recipe involves making a very simple roux. The other ingredients are basic with some convenience items to cut down on the preperation and cooking times.

Easy Cajun Sausage Corn Bisque Recipe

Directions:

  1. In a large, heavy cooking pot, melt the butter.
  2. Sprinkle the flour in the butter. Use a fork and blend quickly and well. This is your roux.
  3. Add the onions and sausage to the roux and saute for 5 minutes over medium heat. Stir the sausage and onions. The onions should wilt and become more clear in color. The sausage will brown slightly.
  4. Add the milk, cream corn, potato soup, Tabasco sauce, and Cajun seasonings. There are many Cajun seasoning mixes on the market. Zatarain's is a good one.
  5. Cover and simmer for around 20 minutes - stirring a few times during the cooking process.
  6. Right before serving, sprinke cheese and parsley on top of the bisque. Or, dish up individual bowls and add cheese and parsley garnish to each bowl.

Although this recipe is typically called a bisque, generally a bisque is a rich cream type soup and does not have larger pieces of food like the corn and sausage. Cajun Sausage Corn Bisque might be thought of as a sort of chowder - a Cajun Sausage Corn Chowder. Regardless of the name used, this Cajun dish is a delicious bowl or mug meal for a cold night. It's easy enough to make for dinner after a day at work.
